The Year
Was 2014

Charlie and Shane were two of Burlington's most notoriously good-looking and charismatic bartenders. Their lives were good- they slept til noon on beds made of money, and their responsibilities were limited to drinking champagne and weeding the occasional garden.

But…
Something Wasn’t Right

...they wanted more. They put their heads together and decided to open up a taco cart. They shared a love for west coast style tacos and saw opportunity in Burlington. Charlie brought his expertise as a well practiced home cook, with a deep focus on cooking from scratch, and a ravenous desire to learn new recipes & techniques. Shane brought his incredibly jovial front of house sensibilities, as well as his skills as a carpenter & builder.

And so they built
a MObile Food Cart

procured a spot on Church Street, and crushed Friday nights at the Art's Riot truck stop. It was a lot of hard work, and a lot of fun. When winter came around, they'd find other work. They went on like this for four years.

In December 2018, the O.N.E. redemption center
redeemed itself as Taco Gordo

Shane moved onto other ventures, but to this day remains part of the heart and soul of Taco Gordo.

Taco Gordo went on to have an incredible first year as a restaurant. We were lucky to attract an incredible staff that has been with us ever since. The space was constantly filled with people, it was a beating heart of our community. Laughing, drinking, eating, talking, hugging, spit droplets flying all over the place like we were invincible...WOW...it was really something.

For most of 2020 and much of 2021, our dining room was closed due to COVID. However, thanks to the dilligence and sacrifices of Vermonters and our hometown of Burlington, we reopened the dining room in July 2021. Now rocking dinner service Tuesday-Saturday, 5-10PM, for Indoor dining, Outdoor dining (weather permitting), and Takeout.
